Can you freeze a Madeira cake? if so for how long?

Freezing Maderia Cake. Yes you can - it will last up to 3 months in the freezer before you notice any drying due to freezing.
Wrap the UN ICED cake in 4 - 5 layers of cling film or in a thick freezer bag........
when defrosting ensure it is thoroughly defrosted and at room temperature BEFORE decorating it. ie defrost over night in its wrapping
DO NOT KEEP ICED CAKES IN THE FRIDGE - they will dry it out and make the icing sweat when you bring it back into the warmer room......the condensation that forms on the surface will disolve the icing.
